it's not delivery, nor delissio!

As a student, I find myself always on the lookout for quick, easy and nutritious meals. This year, one of those has been homemade pizza! The pizza craze was mostly inspired by a jar of Ragu that I had opened and some intense cravings. Besides, there are only so many times you can eat marinara pasta! Even though I love my pizza extra saucy, I believe I still made pizza 3 or 4 times with that jar. Like most of the things I make, what went on top of the pizza mostly depended on what I had in my fridge. In this case, sliced tomatoes, unfrozen corn kernels, red peppers and monterey jack cheddar.
The crust is yeast-free for ease and convenience. The whole thing literally takes ten minutes to throw together and 20 minutes to bake.

Crust
2 cups flour
1 tsp salt
2 tsp baking powder
2/3 cup skim milk
1/4 cup vegetable oil

I'm pretty sure you can get away with substituting water for milk, but I did promise myself to try to get more calcium into my diet :) If you want a little more flavour in your crust, throw it one or two tablespoons of spices (I use a combination of thyme, chili flakes, oregano). Mix all the ingredients together and then knead it a few times to make sure it's all combined. Plop the dough onto a baking sheet lined with aluminum foil (easy clean-up!) and use a rolling pin/fingers to flatten it out. Make sure its not more than 2cm thick so that the crust has enough time to bake. Before you pour your sauce on top, spread a couple teaspoons of oil on the top. This will prevent the sauce from drowning the dough and making the middle layer of your pizza a gross gluey mess. Then throw on the sauce, your toppings, more spice mix and shred some cheese! Bake at 425F for 20 min, or until crust turns golden. By then, the crust will have developed a crunchy base. Take it out, cut it up and dig in!
My mother is appalled that I keep making pizza for dinner instead of having a real meal (i.e. one with rice), but at least it's healthier than this one! (I'm not going to lie though, I definitely saw that and wanted to try it...)
