cold potatoes aren't hot
Somehow, it's fall again, so many of my favourite fall classics are back! I picked up a pumpkin for $1.50 at the supermarket the other day, and I've made some pumpkin stew and fish curry with it so far.
Last week I had some potatoes that needed to be consumed, so I brought a potato salad to a potluck. Back home, we make two kinds of potato salad: this one features celery, corn and pickles, and the other one has egg, ham, apples, peas and carrots. It's no coincidence that I made the one with less ingredients: my parents are very particular about making sure everything that goes into the potato salad has been patted dry, and the other one just takes way too long! I mixed in a couple spoons of miracle whip, a squirt of mustard, salt and pepper, and let it sit overnight to let the flavours meld. Delicious!
I didn't soak the potatoes in salt water while I was cutting them, so they darkened a bit. Still, potato salad is always awesome.
I've also been trying out some new stuff: these are my kale chips! I finally saw some at the market and I've always wanted to try because I've read so many bloggers talk about how they taste just like chips. True story. This is great stuff. Cut the spines away, washed it, spun it dry, laid it out, sprinkled with salt and drizzled some oil and then baked it at 350F for 10 minutes. They did get a little less crunchy as they cooled cause I think I took them out a little early, but I don't mind having a little vegetable with my chips! If you see kale at the market, I highly recommend picking some up and trying these :)
